New Zealand has its new grill master: Aucklander Nate Lawson, 13, who beat 27 adults – some three times his age – to win the grand prize in a Steak Cookoff Association (SCA) competition on Saturday .

Nate became the youngest Kiwi of all time, and one of the youngest in the world, to qualify for the SCA World Championships in Fort Worth, TX, where he and around 17 other qualified New Zealanders will head – Covid restrictions allow it – in March 2022.

Lawson has only been grilling competitively for about a year, on a team called Burnt Beginnings with daddy Alex, mum Anna and her 11-year-old sister Phoebe.

Phoebe also did well in the Tai Tokerau Low and Slow BBQ competition over the weekend, taking second place in the Kids’ Que competition.

The teenager entered the long-weekend competition seeking a place in the top 10.

“I’ve been pretty consistent, ranking as 16th and 15th in the biggest competitions,” said the Mount Albert Grammar School student in grade 9. ” I worked hard.

But on Sunday, Lawson didn’t think he’d hit a personal best.

He had been distracted by the bad weather and the large crowd that had gathered for the steak contest, one of the weekend’s highlight events.

So when the judges retired to blind taste the steaks and decide on the winner, he wasn’t expecting much.

“I was shocked and didn’t know what had happened,” Lawson said. “I thought they picked the wrong number because it’s a blind tasting.”

But there was no mistake. Lawson had won first place, beating the 2020 national champion and others, to pocket $ 1,000 and what is known as a “golden ticket” to the world steak championships.

Lawson was so shocked he couldn’t speak on the podium when he received his trophy.

“He was certainly the most speechless I have ever seen, and there were a lot of eyes in the crowd,” said contest organizer Ken Van Mackelbergh, owner of the barbecue grill company BOI. .

Lawson was the youngest SCA winner in New Zealand and one of the two youngest Van Mackelbergh knows in the world.

He was a worthy winner, Van Mackelbergh said, and “pulled off” the combination of flavor, texture and appearance that makes the perfect steak.

Lawson’s victory was “definitely at the top” of the weekend’s competition highlights, said Van Mackelbergh, who announced the winning ticket number.

It had started to feel real now, Lawson confirmed, and he was focusing on upcoming events in New Plymouth, Rotorua and Napier, while also starting to fundraise to travel to the SCA World Championships in Fort Worth.

Over the next few months, Lawson said he would work on consistency, so that the cook was perfect every time.

“This is probably the hardest part,” he said. “You can’t see it, you’re not allowed to cut the steak before you put it back, so you can’t check.”

With four and a half years of high school left, Lawson wasn’t sure if he wanted to cook as a profession, but he enjoyed competition.

Nate Lawson’s Tips for Cooking the Perfect Steak

To cook the perfect medium steak, Lawson first brines his meat in a combination of stout (someone over 18 must buy it) and beef broth, along with an injection of tenderizing and seasoning. .

He rubs the steak with the Bull Dust rub from Auckland company Rum and Que – one of the Lawson family sponsors – then charcoal on a PK grill.

The steak cooks for six minutes and is turned four times during this time. Lawson checks the internal temperature (the ideal is 60 ° C), then rests the steak for five minutes before handing it to the judges.

“If you don’t put it down properly, it will be tight and lose its juice, making it dry,” he said.
